Don't Throw Those Away!

Thanks to one of my sister's link list, we are looking at citrus peels in a whole new way.  Instead of throwing lemon, lime, orange, or grapefruit peels away, you can boil and sweeten them into a tasty treat that is almost better than eating the fruit itself!

Candied Peels

Assorted citrus peels, sliced and pith removed
  1. Removed the peel from the fruit in sections.
  2. Slice into narrow strips.
  3. Remove the pith (the white, spongy part).
  4. Place peels into a pot and cover in water.
  5. Bring to a boil, drain and rinse.
  6. Cover in water and boil again.
  7. Drain and rinse.
  8. Cover in equal parts water and sugar (ex. 2 cups water and 2 cups sugar).
  9. Simmer until peels are translucent.
  10. Drain, pat down with a paper towel, and roll in sugar.
  11. Let them dry out for about a day and enjoy.
